VEGAN JAMAICAN CURRY

Ingredients

Mr Brown's Jamaican curry powder
Crown prince squash (also known as Chinese pumpkin) 1/4
Yam
Eddoes
Red scotch bonnet
Butter beans
Pre smoked, marinated tofu
1 onion
6 cloves of garlic
Coconut oil or olive oil
Can of coconut milk
Creamed coconut bar
1tbs thyme

Method

Chop onion and garlic and equal amounts of yam,pumpkin and Eddoes. Remove the stalk from the scotch bonnet and make a slit in it. (Wash hands after!)
Heat up 1 tbs of oil (of your choice-I prefer coconut)
Add the onion and garlic and scotch bonnet and stir for a few minutes.
Add the rest of the veg and the thyme.
Sprinkle with 3-4 tbs of Jamaican curry powder.
Stir and sauté for a few minutes then add enough water to not quite cover the contents of the pot.
Bring slowly to a boil and simmer till the yam is soft.
Add 1/2 tin of coconut milk and 3tbs of grated Creamed coconut.
Add a tin of butter beans and the pack of the tofu.
Simmer for another 5 minutes.
Serve with rice n peas..see recipe below.....
 
Rice n peas recipe

Serves 4

8 ozs of basmati rice (brown or white)
1 tin of kidney beans
1 tin of Creamed coconut
I red scotch bonnet
1tbs time
Pinch of salt
Water.

Method

In the saucepan add double the volume of coconut milk to the rice and add the kidney beans including the water from the tin.
Add the thyme and pinch of salt.
Remove the stalk from the scotch bonnet and make a slit. Add to pan.
Lid on the pan
Very low heat
15-20 mins.
Do not stir!!!

REMOVE THE SCOTCH BONNET AFTER COOKING FOR BOTH RECIPES!

Just made a delicious brunch......
ddraig you might like this if you can get hold of a gluten free wrap or make some injera Injera - Immaculate Bites

I grilled some Heck beet sausages.
Fried oyster mushrooms with garlic and tamari soya sauce -fried em hard!
Made some hummous.
Warmed up a wholemeal wrap.
Spread the wrap with some vegan mayo
Houmous, mushrooms, chopped avocardo.
Two beet sausages cut in half lengthways.
Salad of your choice.
Wrap it up!

Delicious!

Great alternative to a sandwich.
 
I'm doing a Sunday roast tonight and my sister and husband are vegan for January. Does the vegan cheese melt nicely into mashed spuds, like regular cheese does?
 
I guess it might depend on which vegan cheese you are using? I found the violife chilli and jalapeño quite melty-it's made with coconut oil. The cheese I made with cashew nuts, not really.
 
You can get mash to be creamy and “cheesy” without using actual vegan cheese, I wouldn’t use it just because it costs more.
Although now I think about it cream cheese type things would probably work in mash. I don’t like soft cheese at all so rarely get it. It could work in mash though.
 
My 11yo son has decided to go vegan for Lent. He's autistic and quite rigid about what he will/won't eat, so I've made a deal with him that in the run up to Lent we will taste test various options so that he has a decent diet available. I think it could potentially be an interesting learning experience for him/us, and maybe even broaden his palate a bit. Or maybe he'll sack it off after two days :D but either way, worth finding out. Being hyperfocused is quite an asset in this respect, as generally when he decides of his own volition to do something, he follows it through.

I never reported back. Mostly as my brother in law offered to help out so gave him the mashing to do. Everyone commented on how the mash was nice, but they couldn't taste the cheese. After they left I realised it was because he'd hardly used any.

Anyway was doing mash last night and thought I'd finish it. Used loads till the mash was super cheesy. Very different to real cheese in the texture it turned the spuds, but rather good. I'll certainly do it again if cooking for vegans. They're probably a bit bored of eating my Dahls and Currys anyway.

A lot of vegan cheese has a tendency to get a bit claggy and kind of coat your teeth and mouth if you use too much of it in my experience. Personally I'd ditch the cheese and use wholegrain mustard instead, but then I'm not much of a fan of cheesey mash be it dairy or vegan
 
Has anyone here heard of a vegan 'substitute' thing called "Plantilicious". They use it at my work canteen. I suspect it is some kind of mycoprotein but can't find it on tinternet (though I suspect a partnership between Nestle and another company).
 
So it's my youngest's birthday dinner tomorrow, meatballs, spaghetti and pizza on the menu and my brother's just told me my sister in law is vegan now. Any ideas what I could do? Are veggie meatballs that could be mixed into a supermarket pasta sauce available? They said they'd bring their own food for her but that offends my pride as a cook. Help!
 
Depends what supermarket you have locally. Cauldron do very nice falafels which you could mix with pasta sauce at a pinch. Quite a lot of supermarkets are now doing frozen vegan meatballs in their vegan range. I've not tried any but do enjoy the falafels as they're not too dry. If you're trying for a vegan pizza some cheeses are more melty than others. Vegan groups on Facebook usually have food reviews on that sort of thing.

I have Sainsbury, Asda, Lidl, Iceland and at a push Aldi available tomorrow morning. I had already considered and abandoned the idea of falafel as I don't think the flavour would work.

Not doing vegan pizza as noone else would eat it.
 
Had a quick flick through vegan group reviews. Iceland apparently do quite nice meatballs.


Positive reviews of Linda McCartney too. Say vegetarian but apparently they are vegan. Just double check the label for egg to be sure. They are chilled rather than frozen.

My Sainsbury's always definitely has vegan meatballs. They've just changed from their own brand to Plant Pioneers which I haven't tried yet but the old ones were nice.

The Iceland ones are fine but I went off them.

Yep. Usually a freezer section for the no meat stuff in Iceland. Their range is quite diverse.

Any thoughts ideas etc on why after 5 weeks of a vegan diet my psoriasis is starting to come back?

Been more or less P free since I went on to a cancer drug in v.small doses approx. a decade ago for Psoriatic Arthritis, a happy byproduct of which is that it also makes my P disappear. Any useful input most appreciated.

Main reason for trying Veganuary was to see if it reduced inflammation levels in my body and made my joints hurt less - which it has :D

Weirdly I'm having vegan meatballs and spaghetti for tea tonight. I just bought some ready made vegan meatballs from tesco chilled vegan section and just made a bolognaise sauce- adding the balls at the onion and garlic saute stage and cooking it in.
I don't see how you can have pride as a cook and then use supermarket ready made pasta sauce. It takes 10 mins minimum to make a good rich tasty tomato sauce. If that's what you are going to do then perhaps she should bring her own food that she knows she likes. :p 🤣

My friend found drinking aloe completely got rid of her psoriasis.

Dunno about soya - am mainly on oat milk - having some soya milk which is 100% more soya milk than I used to have before January
Gluten - hmmm, maybe a little more but not loads - am trying to watch how much bread I'm having as it is just to easy to have toast
Tomatoes - hardly any before January - same now - I might eat half to one a week as a raw veg averaged out over a year - obvs there will tomatoes in stuff but not loads of tomatoey stuff

Will have a read about Aloe - have heard of that before.

Just wondering if it is a deficiency or an addition in/to my diet that might be at work.

If you're diving into the vegan section in Iceland, I highly recommend the chocolate puddings for anyone, and the fake duck spring rolls are also nice.
 
So I bought linguine rather than spaghetti cause spaghetti said suitable for vegetarians and the linguine said ...and vegans. But both have no ingredients other than flour but list eggs on the allergy advice. Is this likely to be a problem?
 
is that
eggs is an ingredient
or
made in a factory where there are also eggs knocking about so you might inadvertently get a drop of egg in your product?
