Lunch should have its own thread

I'm adopting the same approach as yesterday - identical breakfast and dinner. Fishy noodles with marinated peppers. I have accidentally ended up with another four lots of smoked fish in the fridge. :hmm:
 
It goes something like this, polly, but this is a "head" recipe, and I may be misrepresenting the amounts.
  • 2 cups basmati rice
  • 1 tin tomatoes
  • 1 tablespoon tomato puree
  • 2 teaspoons curry powder
  • 1 teaspoon each of turmeric, garam masala, cumin
  • 1 teaspoon lime or mango chutney
  • 4 eggs
  • 1 onion, chopped
  • 1 teaspoon grated ginger
  • 2 cloves garlic, sliced
  • 500ml vegetable stock
  • Random amount of freshly squeezed lime or lemon. Probably half a lemon.
  • 225g smoked tofu, "shredded" with the back of a fork so it looks like flakes.
  • Some chopped chives
  • 3 tablespoons yoghurt or creme fresh
  • 1 tablespoon vegetable oil
  1. Medium boil the eggs, so there's still some softness to the yolks (I use a "timer" that changes colour in the water with the eggs). When done, rest in cold water.
  2. While the eggs are boiling, saute the onion, garlic and ginger in the vegetable oil.
  3. Add the spices, stir well and cook for 3 minutes.
  4. Add the rice and stir well.
  5. Stir in the tomato puree and tomatoes, then add the vegetable stock.
  6. Bring to the boil, stirring occasionally, then reduce the heat to a simmer and cook until almost of the stock is absorbed. Like a risotto, but less pernickity. Stir now and again to prevent it sticking. Add more stock if necessary. (To be honest I wing this and amounts might be inaccurate).
  7. Add the smoked tofu and stir well. By the time the rest of the stock is absorbed, the tofu will be heated through thoroughly.
  8. Remove from the heat. Stir in yoghurt or creme fresh and chives. Cut the eggs into quarters and stir into the kedgeree, keeping a few quarters aside for garnish.
 
I had a chicken quesadilla, beef taco and Sprite Zero from Taco Bell. Taco was a bit empty apart from shitloads of lettuce but the quesadilla was good. [emoji4]
