Lunch should have its own thread

Butternut squash, flageolet bean and tomato stew, with added buffalo mozzarella, mopped up with injera. Delicious.

Ethiopian food is one of the things I miss most now I'm not living in London. It's something I really can't convincingly cook myself, too :mad:

Today I had gruyere and tomato with mayo and black pepper, in a wholemeal pitta.
 
Quinoa, carrots, tomato, cucumber, bean sprouts (I sprouted them myself!) and garlic chive (grown in my garden!) salad with balsamic vinegar, lemon and sumac.

Chicken leftover from a roast, black olives and lettuce.

Meant to say, sojourner, I made parmiggiana at the weekend with a fucking ginormous beast of an aubergine from my mum's allotment that fed a family a four, with leftovers :D Your recipe was lush, thanks :thumbs: And I had some for lunch yesterday or day before (relevance to thread). Lidl prawn noodlegate a mere memory :thumbs:

Well, it was a bit of Italian /Ethiopian fusion, which possibly has some unfortunate imperialist overtones...
 
My brunch......an apple, pineapple, spinach, ginger and lemon smoothie with added wheatgrass, spirulina, chorella and linseed ( this was a frozen mix from iceland- the shop!) Just added coconut water and the linseeds.

Wholemeal pitta halved and toasted and filled with egg mayo, Turkey ham and watercress.
 
I've got a whole take away container of roast chicken from Sunday to use up today before it goes off. Although it'll probably be alright another day, probably? So that in a bowl of salad with mayo and mustard.
