Lunch should have its own thread

Daal, chapatti and kachumber. Cup of tea.

Sesame rye crispbreads with houmous, two boiled eggs and salad (lettuce, cucumber, tomato, peppers, carrot, radishes & beetroot). A pear and half a banana.

I quite often eat four meals a day - never sure which thread the middle two should go in :hmm:
 
Leftovers were lunch today, anyhows.

I’m a bit fucking sick of aubergine kuku, tbh. We’ve catered for guests for 3 weeks running, and the first lot liked it so much that I’ve made it for the subsequent two weeks, and for a work pot luck in between. There’s 12-16 slices per, and that’s 4 kukus, = probably 56 slices of aubergine fucking omelette, with 3 eaten per lunch party and (Tbf) all but two eaten at the pot luck.

My wife has also probably eaten two. And I know of two that were binned.

That’s 42+2-9-2-2 =31 slices of aubergine omelette over 3-4 week’s. I wish that didn’t feel quite so accurate.

Also had bacon and pumpkin soup, w/ bacon and home made croutons (some dick didn’t buy a loaf they said they wanted, so I croutoned it w/ fennel, chilli and black pepper). The soup is frankly both bland and over spiced w/o the bacon / crouton topping. With them, it’s pretty lush, tho.

I have a bucket of the stuff to get through, so this is a good thing.

Wholewheat pasta (mix of penne & fusilli) with what was intended to be my usual spicy turkey bolognese, until I went and added some other random veg and it turned into something more like ratatouille. Turkey-touille! :thumbs:

Second lunch was salad - black pepper smoked mackerel, brown rice, green lentils, spinach, cucumber, cherry tomatoes, feta, avocado, mint & spring onions.
 
Already had rice cakes with peanut butter plus a banana but that was more a mid morning snack :hmm:

Got a chicken leg left over from Monday's dinner (will I die...?!) plus a hard boiled egg (boiled last night - shouldn't die :D) Need to buy something to go with these 2 things. Salad bowl probably. And a roll or something. Trying to cut down on bread but not succeeding. At all.
 
Made a veggie stew last night for a few days' meals and have just had a portion. It kicks arse. Onions, carrots, butternut squash, red cabbage, passata, tin of chickpeas, ground cumin, smoked paprika, marigold stock powder. It's gone all thick and delicious.
I have shamelessly copycatted this and it's bubbling away now :thumbs:
 
This week's lunches are -

Butternut squash, cavolo nero, mushroom, pea & cheese risotto and some strawberry yoghurt OR chicken & veg stew, an apple and two dark chocolate lebkuchen for first lunch (whichever I don't have will be tea instead)

Sesame rye crispbreads with piri piri houmous, two boiled eggs, salad, a pear and a chocolate mousse for second lunch
 
A bowl of chickpea with salt and pepper and a glass of fizzy water. I've got a banana for pud, which I haven't managed to nom yet.
