Dunno if it's the most ridiculous but it certainly wasn't a red. I get the feeling that in some games the VAR person somehow feels obliged to find and offside or a red

Referee never gave it. No need for any other involvement. VAR was supposed to make clear whether something was a pen or crossed the line etc if the ref needed to know, not if some Johnny not even at the game feels like sticking their fucking neb in.
