If a player is in an offside position when the ball is last touched by a teammate, then it's offside if he subsequently gains an advantage by playing a ball deflected off an opponent. The exception being where it was a deliberate action by the opposition player (other than a save).

He is in an offside position, albeit it's not an offside offence until he interferes.

Per Law 11:

'1. Offside position
It is not an offence to be in an offside position.
A player is in an offside position if:
• any part of the head, body or feet is in the opponents’ half (excluding the halfway line) and
• any part of the head, body or feet is nearer to the opponents’ goal line than both the ball and the second-last opponent
The hands and arms of all players, including the goalkeepers, are not considered. For the purposes of determining offside, the upper boundary of the arm is in line with the bottom of the armpit.
A player is not in an offside position if level with the
• second-last opponent
• last two opponents'
 
He is in an offside position, albeit it's not an offside offence until he interferes.

So if attacker's in an offside position but not interfering with play when the ball's played and an opposing defender touches the ball attacker's not in an offside position any more, and can interfere as much as he or she likes :)
