What's your favourite very simple veggie meal?

Carrying on my one pot in the microwave theme. Spinach and eggs nuked. If you're feeling fancy throw in some tomatoes and stick cheese on top.

I like the sound of that:) can you use frozen or tinned spinach and do you just chuck it all into a bowl together?
 
Stuff on toast.

Pick any one or two of: Beans, cheese, mushrooms, sweetcorn, tomatoes, marmite, pate. Place on top of toast. Serve.

If you were feeling adventurous you could put the toast on top of the other ingredients!

*nods to moose yet again* Parmiggiana di Melanzane - sliced aubergines, layered with tomato and basil sauce and fresh mozzarella ,topped with a crust of fresh parmesan, baked in'thoven on about gas mark 4 for 30-40 mins. Fucking lush. If you want more to go with it, have a green salad and pesto pasta.

Which brings me to

Pesto Linguine with black olives and parmesan - toss cooked linguine in pesto, chuck on olives from a jar, grate parmesan over - also fucking lush, and I'm having it tonight!:D

Get some chick peas and olives and garlic, mash them up in a mixer. Dip in your celery.

Celery is puke.

F**k off that's not simple! :D Not the way I make it anyway - it involves de-skinning and then chopping loads of tomatoes, simmering them with basil and vinegar and salt and pepper while I fry the aubergines, then doing the layers thing, then grating bread for breadcrumbs on top... Takes a long time and uses a pot, a frying pan, a plate and an oven dish!

Make another casserole/stew and use it in that

Or make ragu sauce with it and some carrots, red wine, tomatoes, onions, herbs, garlic and lamb mince

It is, I promise! Here's the easy way (and how I do it)

Don't fry the aubergines. Just slice them fairly thin and layer them in an ovenproof dish - the tomato and basil sauce is more than enough liquid in there. For the sauce, chop fresh basil, fry garlic, chuck in tin of tomatoes and then the basil, simmer for 5 mins. It really is a dead simple dish, knocked out in 10 mins max.

I'm thinking of doing a leek and potato soup - we've just finished off 4-day stew :D One of the things I love about winter food is the way you can make vast stockpots of it and it lasts for ages
 
How long does soup keep in the freezer? I've still got quite a bit from... erm.. quite a few months ago :D
 
Cook pasta, add one tablespoon of pesto and two tablespoons of creme fraiche for each serving. Mix together.
