What's your favourite very simple veggie meal?

I'm talking about something that uses maybe two or three ingredients, five at the most, and takes very little effort to cook. For example, roasted pumpkin with some sort of sauce or something. Grilled/roasted courgettes, peppers and red onions. Roasted/grilled corn on the cob with green beans. Roast root veg with garlic and rosemary. Grilled tomatoes on toast with olive oil and basil, that sort of thing.
 
Lentil soup
(uses lentils, garlic, onion, cumin, requires some boiling and maybe some salt. Sweet!)
 
lentil splodge with rice or pasta or potato or toast.

lentils, tin of toms, onion, garlic and herbs or other veg you fancy throwing in. Basically big pot in the microwave do the lentils in there first and chuck everything else in.
 
groats&puy lentils with steamed or stir-fried seasonal veg and toasted seeds - I eat it for lunch 2-3 times a week.

I toast a mix of seeds (linseed, sesame, nigella) in advance, so there is a jar of them by the cooker.

I also keep a 4:1 mix of groats and puy lentils ready. It looks like birdseed but it tastes good when cooked.

tasty & good for blood-sugar, bowels, brain and planet. If I have a plate of it at lunchtime I'm not hungry again until breakfast.
 
What is in pasta arrabiata? In spaghetti aglio e olio, what is the thing that isn't oil? What's insalata caprese?

It's not just that I can't be bothered to look them up, but I also think it would be helpful to describe what the actual food is in English rather than just giving the Italian name...

When I make it it is tinned tomato, real tomato, tomato paste, onion, chilli & herbs.

It's basically a very simple tomato & chilli sauce.
 
They don't have an English name.

My arrabiata recipe (for 4):

arrabiata means devil in italian I think

heat 1/4 cup olive oil. thinly slice 4 cloves garlic. saute in heated oil for 1 minute. Add pinch dried red pepper flakes (a little goes a long way) and saute for 1 more minute. Add 3 tins plum tomatoes and simmer for 15 minutes. Add 10 roughly chopped basil leaves, season with salt and a little marjoram or oregano (dried or fresh). Serve with penne and freshly grated cheese.

Spaghetti aglio e olio: serve spaghetti with steps 1-4 as above (i.e. sauteed garlic and pinch red pepper flakes, or fresh chilli). no cheese for this one. aglio=garlic in Italian. olio = oil.

insalata caprese: tomato, basil, fresh mozarella. drizzle of olive oil if you like. caprese means from capri, I think, hence no translation.

beans on toast if you're trying to impress a chick.
 
Chop up an onion, pepper, carrot and caugette, soften 'em up with some garlic.
Add cumin, coriander, turmeric, cardmom etc as you like.
Stick in 1/2 tin tomatoes, some stock and some chick peas and simmer for a few minutes.
Turn the heat right down and sling in some cous cous and a handful of frozen peas.
Leave it to simmer, stirring occasionally, until the cous cous is soft.
Stir in a little fresh coriander and serve.

Simple, cheap and very tasty.

Don't know if that was directed at me... but mine is pretty simple (even if you make your own cheese sauce)

melt some butter, add some flour, then milk, then cheese (and maybe an egg)
pour over cauliflower and bake.

Not exactly quick to cook, I grant you. But simple to prepare :)
 
actually another simple recipe my mum makes is slices of aubergine, mozarella and tomato, drizzled in oil and baked...yum..... she might use some herbs as well...
 
These 'simple' meals are the sort I would decide to make as a special meal and spend ages slaving over and getting wrong:(
My sort of veggie quick meals are supernoodles although sometimes make them into a posh high falutin' meal by adding mushrooms and a stock cube or spaghetti hoops with cheese in on toast if pushing the boat out a little or having a dinner party.My 'Easy Veggie Student Grub' book is still aspirational living to me and we won't even mention the River Cafe Cook Book someone bought me
Oh and a lot of pricy ingredients I've seen which i wouldn't bother using when throwing a quick meal for one together
