Puzzle: I have two children ...

I don't understand what you mean by quantity of material.

We know there is a second child and that the child could be either male or female with an equal chance of it being either.

Where's 'quantity' enter in to it?

In this case, the 'quantity' of equally likely pathways that lead to each possible outcome.

If I said, "doggy, my only child is a boy, what is the probability that my next child will be a boy?", your answer would be correct.

If I said, "doggy, I have two children and one of them is a boy, what is the probability that the other one is a boy?", your answer is incorrect.

And if we put Tuesdays into the mix, your answer is still incorrect, for exactly the same reasons.
