Different people have different tastes. I've not had oysters in nearly a decade thanks to my recent period of poverty, but previously I had them neat. A touch with the lemon slice to ensure they were alive, then into the mouth for chewing and then swallowing.

Burger made from oysters. There are two possible places. The food fair at Granville Market has a fish place with good oysterburgers. There's also a standalone place at the fisherman's dock by Granville Market.

The two places mentioned have breaded oyster burgers.

I prefer the oysters done this way, don't know what you call it.

Bloody impressed that they can deep fry oysters - they always seem about 99% water to me. Still, you have to hand it to our North American cousins when it comes to anything involving unhealthy frying...

Caramelised? It looks as if they were slow fried, maybe even braised, which would make sense as anything potentially tough either needs very quick and hot or slow and gentle cooking.

Tsk, you can deep-fry anything if you try hard enough.

I can't find anywhere in London selling oyster burgers. There are countless places that do them deep fried as in your other photo, cooked on the half-shell with a topping (like the Motoyaki), and many of the better Chinese establishments use them in omelettes and other good stuff.

So only one thing for it; make my own oyster burgers.

Found this recipe which I'll give a go tomorrow assuming I don't lose interest because I hate shucking oysters.
