I prefer the oysters done this way, don't know what you call it.

Caramelised? It looks as if they were slow fried, maybe even braised, which would make sense as anything potentially tough either needs very quick and hot or slow and gentle cooking.<snip>I prefer the oysters done this way, don't know what you call it.
