Lunch should have its own thread

Leftover soup of potato, cabbage, kidney beans, chilli, lemon and coriander leaf. This was a fridge-clearing meal when there was bugger all in the fridge (and the shops were busy mourning), so added some Ajvar as well. The results were surprisingly good.
 
I made pancakes for the fella's birthday lunch. Never made them before and I'd probably use rings next time, but he loved the misshapen efforts with lemon and sugar, and I had maple syrup and blueberries with mine. Tasty. Would make again.

Yeh, I bought crumpet rings in 2020, but you can use them for pancakes too. I am absolutely fucking rubbish at handling pancakes, it turns out. Mine was supposed to be a bigger one, but ended up in about 8 crumpled pieces.
 
Heinz Thai Vegetable soup. It was rubbish.

Bought back some saffron cake from Devon, so maybe a slice of that this afternoon, to add to the general “carb overload” theme of this week.
 
I had some slices of tiger bread (on special offer) with butter.
Also a sweet lassi, because I realised that I bought ordinary yoghurt last week instead of Greek yoghurt, not thick enough for tzatziki later this week and having no other plans for it, a nice lassi was the first thing that came to mind.
 
Late lunch thanks to stupid traffic on the way back from Delamere Forest. Sourdough crumpets with marmite and cheese, coffee, 2 dark choc digestives.
 
Rapid dahl. Basically, using the tarka method, but with red lentils, gets food in the bowl so quick.

Boil the red lentils with a stock cube as the very first thing you do. Once that's started, then chop the onion and fry the onion and spices, then stir through the red lentils. By the time this happens, the lentils are almost cooked.
 
Leftovers

Duck breast with leeks, spinach, mushrooms, samphire, broccoli and loads of juices.


I scored a whole box of overripe pineapples on Saturday night so I chopped them all up and I’ve had them stewing in the slow cooker overnight. I’ll have some now with yoghurt and make the rest into jam, or maybe just reduce it and reduce it til it’s sticky goo and not bother adding sugar.
 
Pea, marrow* and mint risotto.

*(see What's for tea thread for more detail on all the other things I made with that marrow. 😅 But have broken the back of it now, only one more meals worth left)
