Lunch should have its own thread

I've started a new lunch thing (obviously the dance is with myself!) and its kinda like: lets have some vegetables, beans, nuts and cheese in the one lunchbox. 1 of everything. And i think could be easily adapted for a vegetarian or vegan (im surrounded by them at work, which is great craic). Today, i was quite hungover and surprised myself that my lunch of: a few leftover potatoes, chickpeas, cashew nuts, feta cheese and balsamic and olive oil really filled me up! Didnt need the chips that i was craving. Learning all the time.....that is the beauty of experimenting with food: it teaches you how to do better all the time.

Today I had (from prepared last night): roasted sweet potatoes, asparagus, mixed beans, toasted pecans, lemon juice, olive oil, and crumbled Wensleydale with apricots.
 
I have just made Chinese chicken and cashewnuts in a blackbean sauce. I tenderised the chicken by soaking it in bicarb of soda for 15 mins.- it's amazing it's tastes like a proper Chinese without sugar ( apart from what was in the 2 tsp of black Bean sauce) or msg. I'm going to look out how to make blackbean sauce from scratch !
