Lunch should have its own thread

I'm at home with my daughter who has chickenpox (but is so not sick, iyswim :rolleyes: :D) so we've done the decent thing and had Heinz tomato soup with bread and butter on the side. Obligatory day-off-sick food.

Poor C...? :D I was going to have this lunch too but someone has eaten the soup. So I had a cheese and chutney sandwich.
 
Homemade sweet potato falafel, roasted veg (courgette, red onion, red/orange/yellow peppers), feta, avocado, romaine lettuce and cucumber with loads of black pepper and lemon juice.

So good, I instagramed it :oops:

Cappuccino. Falafel salad again. We get to eat something for free at volunteering so had a piece of cake after - not sure what, sort of plain sponge that tasted of lemon and maybe ginger or some kind of syrup? It was nice anyway.
 
Sandwich lunch provided* at work as we had visitors from the DfE.

*by me and my colleagues, via m&s...bloody knackered after running around all day.
 
How did you make your falafel iona?

  • Two tins of chickpeas and one tin of broad beans - drained, rinsed (giving them a good swish around in a sink of cold water will help take the skins off the chickpeas, although that's not essential if you can't be bothered with the extra faff - I don't) and dried
  • Two smallish sweet potatoes, cooked and skin taken off
  • An egg (although I think with the sweet potato it was moist and held together well enough without egg)
  • Finely chopped onion (any kind) and garlic, fried until soft
  • Whatever seasoning you want to use (those were salt, pepper, cumin, turmeric, cinnamon, coriander, chilli, ginger, garam masala and fresh parsley in various quantities)
Mash everything together until nearly smooth - would be much easier with a food processor but I only had a potato masher :facepalm: Roll into balls and bake on a lined or lightly greased tray at 180-200°C for 25-40 minutes, turning occasionally. You might find it helps to refrigerate the mix before making into falafel and/or before baking.

I've written that on my phone over several walks in the pouring rain at different times so apologies if it makes no sense :oops:

E2a iirc adding a bit of baking powder will make them lighter. And you can fry instead of bake if you want.
 
stirfried red onion, garlic, broccoli and mixed bean sprouts - my first after several years of only eating steamed veggies.
 
I didn't really have lunch today. Instead I made a couple of pieces of toast and had lashings of Lurpack Spreadable and lumps of Stilton and Wensleydale cheeses, followed by raspberry trifle.
 
Leftover salad from last night, a couple of spoonfuls of raspberry and cranberry yoghurt and the last of the passion fruit juice.
