Leftover roasted root veg :?:

Do we have a 'ready steady cook' type thread anywhere?

I bought a bargain tray of veg for a pound on Saturday, at the end of the market, and roasted most of it (Swede, cauliflower, parsnip, sweet potatoes) but don't know what to do with it now.

It was fine on the day, and ok yesterday as mash with sausages. What else shall I do with it? Probably a couple of meals worth left.

Google says pasta, but not sure that'd work - sounds like a lot of carbs.

I often roast and freeze root veg - just get it out of the freezer and heat in the oven

I am only allotted one freezer drawer in my shared house and it's absolutely stuffed chock full atm, so no room for freezing the veg.

You never know when it's going to be end of times and all those cheap fishfingers will come in handy.

Good idea though.

I did soup in the end and it was pretty damn good! I put a courgette in too, but was warned off the avocado by housemate, so was saved from ruining it with over-enthusiasm.

Glad you enjoyed your soup :)
Every time I see your tagline, I'm reminded of this.
