Burger Thread. Yes!

I hope peanut butter on burgers doesn't become too popular, given that I love burgers but peanut butter could potentially kill me :(

I have to avoid place that use peanuts or peanut butter in their kitchens as it is just in case, god forbid that this trend spreads to burger places in general.
 
Well. For the first time ever. Yesterday, I had a McDonald's double cheese burger, but I held the cheese

Crazy. I know, but I don't really like cheese and this appears to be, i was so informed by the disembodied voice from the speaking box, to be the next size burger up from the basic hamburger and I wanted something a little bit more to go with my 6 nugget meal

As with anything McDs it wasn't great but was there and filled a hole

Last time I had a McDonald's was the first time I'd had one in 20 years. I had a double cheeseburger. Well I say 'had', I spat it out. I couldnt believe the amount of salt in it, so I looked it up when I got home, and weighed out the amount of salt in one. It was more than I'd put in a large meal for 4 people.

One thing the pandemic has shown me is that home cooked food really is far better than anything take away.

Its only when you go from home cooked to bought that you realise how much sugar or salt is put into foods.

I bought a battenburg cake as part of my online shopping. A Mr Kipling Battenburg to be precise.
It was ridiculously sweet.
I never noticed that before but lockdown and cocooning has definitely led to my taste buds becoming highly sensitive.
 
I've lifted my burger game. I've bought a manual meat grinder!

I put it into the freezer.

I received a chuck steak in the post.

I chopped that into little pieces.

I put those into the freezer.

30 minutes later, ground them up.

Formed the result into burgers - no need for egg, there's enough fat.

Fried them in lard.

Reader, let me tell you, this resulted in some of the best burgers I've ever had.

They went down well with Mrs Bassjunkie, Miss Bassjunkie and Master Bassjunkie too.

The way we used to do it in the '70s! Except without the freezer part, they were expensive and we didn't have one. Well and the ordering by post part too. But there was a butcher in the village (where I used to live) back then :D

You can do similar in a good food processor if you are careful - but as you say the meat needs to be in the freezer for around 30 minutes just so it is a bit more solid, chill the blade and the bowl too (in the freezer if possible), and chop it VERY gently - like 3 short pulses then stop, form it into patties and chill again. Where it goes wrong in a food processor is if the meat is in the moving blades for any length of time it heats up, even if that is just slightly the fat starts to melt, and you end up with a meat mush that is going to fall apart when you cook it. It is possible to do it perfectly well with modern gadgets though, just don't mince the fuck out of it :D

Not keen on Edam as is, but it is nice for melty stuff - would certainly give it a go on a burger, but thinking about alternatives to Cheddar simply has me thinking that Gouda would probably be better.

Not sure about cheese with hot dogs mind you, I am a bit of an onion/ketchup/mustard purist.
 
If you must put cheese on a burger a slither of brie would melt nicely across it. Thinking about steaks having stilton or gorginzola might work 🤔
 
Is this admissible on the burger thread or nay? It’s a “dirty plate” my local burger place has started doing, and features chopped up burgers as part of the toppings.

Fries, chopped burgers, bacon, chipotle Mayo, sliced mild chillies, lettuce, salted creme fraiche, cheese and spring onions.

No burger buns were harmed in the making - apologies for any offence caused to burger purists!

I’m gonna order one as takeaway later this week or next, but doubt it will look this pretty once turned out onto my plate at home, so using the restaurant’s own pic.

It's like burger and chips mated with a plate of nachos...

I'd give it a go!

Yeah, if i could design my own I think I’d go with fries, sausage & burger chunks, sriracha Mayo, grated cheese, burger sauce, red onion and jalapeños.

I briefly considered trying to make one at home, but I think it would hinge on the quality of the fries, and oven chips wouldn’t do a dish like that justice.

Luckily, we have a deep fat fryer at home . . . maybe time to dust it off again

Shame Mrs Voltz doesn't eat beef . . . Ooo! but she does eat chips

It's a mess. It's to big, could be covering up all sorts of shit (germs) in there Smacks of American meets Mexican. It offends my sense of good order and tidyness.
