Burger Thread. Yes!

Dropped into here walking back from the cinema


Got the Cheeky Elivis, Fries and chicken bites.

Damn tasty. The burger was thick and still a touch pink in the middle.
The fries were crispy and extra salty just how I like em.
The chicken was maybe a touch overdone but the crispy coating was great.

was a very satisfying meal.

Ooh that looks good! Can't do burgers that are pink in the middle though, it is ok for a steak but when you start mincing meat any bacteria on the surface can and do end up in the middle of it, and burgers should always be cooked through in the middle for that reason (honestly working in Defra for god knows how long has affected me a bit!)

Had e-coli once, not going to risk it again.

Medium rare i belive is the risky one.

Although I can imagine going a bit further is safer.

Yeah, steak tartare for example is I believe pretty low risk as long as the meat is fresh and has been stored correctly - it's when stuff starts getting warm enough for bacteria to multiply and start excreting toxins but not hot enough to kill them quickly that minced meat gets more risky.

I'd probably be ok with a rarer burger if I'd seen that someone had actually stuck a thermometer in there to check the temp in the middle, but if it's down to guesswork I prefer my burgers to not have any pink. There's a sweet spot between being cooked through but juicy and going too dry ofc.

Now a nice steak (of any beef variety) on the other hand I'll take medium rare thanks, there is a low risk of any bacteria being inside it and any on the surface from the butchery process or subsequent handling will have been killed when it is seared - good to go :)

To be fair to Haiwiann folks they have pineapple in pretty much everything. A bit like us with chopped, warm, watery lettuce.

That looks really good, but is it brioche? Kind of looks like brioche (although correct me if I am wrong!) Really not into brioche burger buns/hot dog rolls - too sweet/rich. The bread should mostly just be a delivery mechanism so you don't get (too much) sauce and grease on your hands, and to keep all the elements together. Brioche is nice with fruit preserves/jams but keep it away from my burgers please :D

Otherwise it looks ace :)
 
Brioche buns certainly have their place.

On a note about buns. I wish the froze little better. Feels wasteful buying a whole pack when I just want a burger.

We just use spare buns to make sarnies over the next few days - I often make egg mayonnaise for that purpose - nice quick lunches :)

(Mind you we probably won't have many left after I've had my burgers in a bit, it looks like OH made himself FOUR, I repeat, FOUR burgers when he got in from work this morning. I am surprised I didn't find him on the sofa clutching his stomach and groaning like some labrador that's managed to get the fridge open while no-one was looking...)

EDIT: The buns also work well for fish finger sarnies or bacon/sausage sarnies, IMO.
