Burger Thread. Yes!

Goats cheese might be a bit too much as well.... it'd need a fair counterbalance such as, aha....Red Wine Caramelized Red Onion Jam :cool:
 
I dunno why they're called brioche buns tbh, they aren't actually brioche. well, the ones they use at the ferret aren't anyway.
 
PD fave Cmrd Khoo has this recipe for your own brioche buns. Ignore the US lackeyite deviationism. Probably some ploy.


Since Londoners started taking their burgers as seriously as the Americans do, discerning burger lovers have come out of the woodwork to judge every component from buns to pickles, patties to cheeses. For me, the best burger buns are made from an enriched dough, soft and absorbent enough to soak up all the juices. A perfect Fourth of July treat.

Brioche burger buns

Makes 12





260g plain strong flour

25g caster sugar

5g salt

2 tsp dried instant yeast

70ml warm milk

3 medium eggs

100g softened butter, cubed



For the eggwash:

1 egg, beaten

2 tbsp milk

1 tsp sesame seeds

1 tsp black sesame seeds



Place the flour, sugar and salt in the bowl of a mixer fitted with a dough hook. Start on a slow speed to mix the sugar and salt through the flour. Add the yeast, milk and eggs and mix on a slow speed for a couple of minutes, then switch to a medium speed for another 5 minutes. The dough will become soft and elastic.

Add the cubes of softened butter bit by bit and continue to mix until the butter is thoroughly incorporated (roughly another 5 minutes). Scrape the bowl periodically with a spatula to ensure that all the butter is incorporated.

Tip the dough into a greased bowl, cover with clingfilm and leave in a warm place to prove for an hour.

Dust your work surface and hands lightly with flour. Tip out the dough and knead into a sausage shape. Cut into 12 pieces, shape each into a little roll and place on a large baking tray lined with parchment paper. Brush with some of the eggwash.

In the meantime, preheat the oven to 180C (fan)/Gas Mark 6.

Brush the buns with more eggwash and sprinkle with the two types of sesame seeds. Bake in the oven for 20 minutes, or until golden.

Place on a wire rack to cool. Cut in half and serve with a homemade burger, ketchup and sliced gherkins.

had this last night, fuck it was good.

We've taken rump steak, chuck steak and beef skirt and mixed them in our own secret combination to create the ultimate pure 8oz beef burger! Served on a toasted brioche bun with lettuce, tomato and tangy cucumber relish. Accompanied by a handmade tomato and paprika ketchup, triple cooked chips and a simple pickled red onion and leaf garnish.

it was served without cheese, as the chef suggested - he wanted the meat to be as unadorned as possible. It didn't need it tbh.

I would disagree with the chef (I say 'fuck what the chef says, they dont know any better than me'), however I'm glad you enjoyed it :)

sure, but if the man says 'I made this combination of flavours to taste like this', it's a bit rude saying 'give me some plastic cheese to melt over the motherfucker' isn't it?
 
and honestly, I was glad to eat it so simple. it really brought the meat to the fore in a way it wouldn't have done if it'd been drowned in cheese & sauce.

I have just come back from a trip to the US.
It was work and mainly in NJ but I got a free weekend in Manhattan out of it. The company I work for are awesome like that, if you are away for a weekend they will try to put you somewhere cool.
I had three burgers in the 2 weeks that I was there. Each time I was asked how I would like it cooked I had medium rare each time.

So before I went I tried to research the best burger in Manhattan and received tons of suggestions but this place looked a good bet: http://www.paulsburgers.com/
I knew as soon as I went in that I wasn't going to be disappointed, real 50's diner style layout with a counter, tables and a waitress that called me sugar.
I ordered the Eastsider, which is their specialty, along with sweet potato fries.
The picture from my phone doesn't do it justice. It was fantastic, it tasted like high quality beef and was really juicy. The bacon, mushroom and onions were also really tasty.
The bun was just some crappy generic white bread and I didn't eat it. Sweet potato fries were crispy and perfect.
Will deffo go back here next time I am in NYC. Almost worth the 30 hour journey.

The second one I had was in Ruby Tuesday, which is a chain of restaurant/cafe/diner places. This kind of place seemed to spring up all over the UK in the early 90's. They would put American number plates on the walls.
It was raining and I was hungover and pissed off so I thought a burger would cheer me up.

I had the Smokehouse which is cheese, onion rings, bacon and barbecue sauce.
Apparently it was handcrafted from 100% USDA prime beef. The bread was toasted wholemeal and I had a couple of bites, it was ok.
Sweet potato fries again. The whole thing was tasty, juicy and delicious and perfect hangover food. I hung around and had a few beers afterwards while I waited for it to stop raining.

The third and final burger was in my hotel.
It was a cheeseburger served on a slice of sourdough :rolleyes: . It was supposed to be medium rare but it wasn't.

It still tasted great but the restaurant was posh as fuck and tried too hard to make a posh burger, which is a stupid idea.
The fries were sliced fried potatoes, I ate one it was fairly average.
