Tell us about your advance cooking for the week... (aka veg box challenge)

Following this now because, while I don't mind cooking in the evenings, I really don't have the time to cook much for lunch now I have a job, so unless I want to just have Huel all day (which I really don't) I need to be sure to cook some things in larger quantities, and I want some better ideas than "more bloody chickpeas" and "another tomato thing with veg in it".
 
Most weekends I cook up a load of food so that the week is filled with easy nutritious dinners and packed lunches for two people. Stuff that's cooked for the freezer tends to get forgotten about :rolleyes: so it needs to be things that keep for a few days in the fridge and can bear reheating or be eaten cold. All they generally need is a bit of pasta, rice or bread to accompany. The dishes are generally driven by what came in the veg box and what needs using up. It's too easy to settle into a routine so I'm interested in what y'all do too.

This weekend I had a load of stuff to use up so not much invention but some regular faves:
  • 'chinese chickpea stew' made with celery, carrots, chickpeas, soy, sweet soy,star anise simmered for several hours
  • shepherd's pie
  • broccoli and tomato stew with garlic and anchovy
  • chicken, carrot and savoy cabbage in (home made) black bean sauce
  • bulgur wheat with roast beetroot and courgettes, smoked goats cheddar (needs something else for flavour or texture, maybe parsley or hazelnuts or both??)
  • puff pastry pie with spinach, feta and dill
I'm also going to try and make glacé mango over the week, roughly based on this method
I still look at this thread to remind myself of seasonal recipes.
This week's menu will feature
  • roasted beetroot (with mackerel, spuds, salad)
  • Sweetcorn and cabbage (with fried tofu and home-made black bean sauce)
  • Cabbage and carrot thoran, Aloo gobi
  • Sausage and lentil stew (with carrot, kale and celery)
 
This week the menu will feature
  • Parsnip crisps
  • Butternut squash, kale, onion, feta filo pie
  • Bramley bread and butter pudding (stale load)
  • Caramelised onion, sesame miso ramen with black kale, carrots and boiled eggs
  • Mirepoix (carrot glut)
  • Peanut brittle (leftover toffee)
  • Kimchi (second attempt, cabbage glut)
  • Beetroot, bulgur, sheep cheese, loaded with coriander and parsley
