Beetroot with onions, a Madhur Jaffrey recipe I've had knocking around for about twenty years and never yet cooked :oops:

Slow-cooker beetroot sounds like a good idea. Mine were a bit too crunchy for salady lunches last time.
This week I have a shitload of carrots. I'm not that keen, and used up a load last week doing bhaji. Not sure I want them again. Will probably do a carrot cake as I've got a weekend guest.
 
Been eating quite a lot of sour kraut, both red and white,but it's almost out. Quite fancy doing some beetroot in the next batch. :)

Not traditional but I find I goes really well with meals like Dahl.
 
Bank holiday special was asparagus, spinach and bacon with hollandaise on muffins. Used up the carrots with some onions and spices in bahjis which went to a bbq yesterday.
This week will also feature
  • Green beans with pasta and anchovy, tomato garlic sauce
  • Tenderstem broccoli with sesame sauce, deep fried tofu, rice
  • Pulled chicken with summer greens
  • Grilled courgette, asparagus, little gem salad.
 
This week I've done a stonking lasagne, with layers of (a) grated courgettes, ricotta, nutmeg and black pepper, (b) cooked spinach and kale with grated cheddar, (c) tomato and mushroom sauce.
Also done a batch of basic tomato sauce, braised lettuce and asparagus with crispy bacon and mashed spuds, the usual carrot /chard in black bean sauce, another pasta thing.

  • Lamb koftes with chilli roasted courgettes and rice
  • Fierce garlic and cucumber yogurt dip
  • Frittata with caramelised roasted baby turnips, balsamic stewed peppers, flat beans, new potatoes
  • Crunchy carrot and kohlrabi salad
Gotta think picnic for next weekend
 
Day off today and weird spurt of energy after 3 hours sleep last night so this morning I got my cook on and made:

Rhubarb cake
Stewed rhubarb
Bacon and cabbage quiche
Tomato, pepper and spring onion chutney

I will also be making some carrot fritters on Sunday :cool:
 
  • Spring greens, spinach, carrot, coconut curry.
  • Roast lamb shoulder with jacket spuds and green salad (lettuce, broad beans, asparagus, spring onion)
  • More of same salad mixed with roast squash and roast courgettes.
 
  • Vat of tomato sauce (see recipe thread for details)
  • Stewed apricots with cardamom and vanilla
  • Carrot and cabbage in home-made Chinese black bean sauce for the endless carrot supply
  • Pasties with leftover roast lamb, carrots, spuds, etc
  • 'pond water' green smoothie with apples, pears, spinach, ginger
 
  • Huge vat of mushroom risotto which made 20 arancini for a weekend social
  • Sweet potato, spring greens and peanut curry
  • A chunky minestrone-type soup/stew with cabbage (and mirepoix and tomato sauce from the freezer)
  • Carrot and cabbage in black bean sauce with tofu
 
Neither made by me, nor in advance - the b/f created the dishes, and we nommed them there and then, but worth sharing for utter deliciousness and good veg box use:

  • Sweetcorn and potato chowder
  • Sausage and tomato salad - veggie sausages plus tomato, runner beans and lettuce from the veg box, little slivers of celery and onion, and delicious rye bread croutons that were like crouton crack. It was like a BLT sandwich, only infinitely more healthy and tasty. :lipsmacking smiley:
 
  • 'chinese chickpea stew' made with celery, carrots, chickpeas, soy, sweet soy,star anise simmered for several hours

Thank goodness for this thread. I really didn't want to have to think about recipes this autumn, but Urban holds my toolkit for dealing with endless mushrooms, carrots and cabbage.

Partway through using up the accumulated veg mountain...

Come at me work lunch microwave and home late dinners.
 
  • Butternut squash, feta and kale filo pie (a bit like spanakopita but with seasonal veg)
  • Pasta bake with gorgonzola, cauliflower, broccoli and leeks
  • 2 litres of Makhani Dal 24 hours in the slow cooker
  • Couscous with roast beetroot, onions and courgette
  • Parsnip crisps
  • Cabbage thoran

Menu for the week:
Sweet potato and leek "moussaka"
Kale and paneer curry + a dry Jerusalem artichoke curry
Cabbage, potato and veggie sausage skillet.
 
Good bump! I like how this thread changes with the seasons :cool: This weekend I made
  • a HUGE pot of dal makhani, 16 hours in the slow cooker for ultimate texture and flavour
  • pasta with artichoke heart pesto, grated carrot and toasted pine nuts
  • stewed peppers, buttered leeks, roasted courgettes and butternut squash to throw into whatever meals through the week (jacket spuds, risotto, pasta)
  • spanakopita (filo pie using winter greens and spinach with feta and dill)
