I haven't had sweetbreads (thymus) in a very long time. They are very nice though.Hearts and kidneys and livers are all lovely. And haggis and black pudding.
I really want to try sweetbreads but I have never seen them on a menu and I bet even if I did, I'd talk myself out of ordering them because if I was in a place that did them, it would have to be a swanky expensive place, so if I ordered them and didn't like them I'd be sad and annoyed and hungry and skint.

My housemate was cooking chicken hearts and offered me a few - they're very nice! So many people get put off by them, but they don't really taste any different to any other part of the chicken...I love hearts too. I prefer to slow cook them, as it makes them very tender.
