Acorda Alentejo -which despite its simple and basic ingredients is absolutely lush. Bunch of corrainder blitzed in the processor with garlic and salt ,add water in a pan bring to simmer and put in 3 eggs to poach. Some stale bread (proper bread not plastic supermarket stuff) or you can get away with lightly torn bread placed at the bottom of the bowl, ladle eggs and corriander/garlic stock on top .
