Made a sandwich so delicious I had to make myself another one. Fresh baguette from the corner shop, mayo, quorn chicken slices, Shropshire red cheese, lettuce, cherry tomatoes.

Always wanted to try courgette cake - never got round to making one. I like courgettes so not put off by them being an ingredient.

I made a spiced courgette cake the other week that was tasty but very dense. This chocolate one however is incredibly light.

Tunnocks do a DARK choccy tea cake?! Fuuuuuck, I need to get me some of these!

I had courgette soup followed by a slice of the same courgette chocolate cake.

The soup is amazing, I made some yesterday too and scoffed the whole pot. It's just finely diced onion, courgette and new potato, softened in butter, add water and a stock cube and simmer till the courgette is disintegrating, small splash of cream (left over from the chocolate icing).
