Lunch should have its own thread

Did loads of extra roast squash, sweet potato and onions last night. Made a stock with all the peelings and chicken bones last night in the pressure cooker.

Made a soup with it all and some lentils and did some croutons with a loaf I baked a few days ago. Was pretty good and I'm not even a massive fan of that style of soup (everything blended together).

Had no time to make sandwiches this morning so just threw the ingredients and 2 pieces of bread in a box and made them at work. Random bits of ham, christmas cheese & a bit of salad. Also had some left over pea and mint soup in the office fridge. Noticed the sugar content and REALLY need to start making my own soup as it was ridiculous. Why would you need to add sugar to soup ffs?!

I had a sandwich with spinach, mayo and mustard. It was as weird as it sounds but I was shaking with hunger and couldn't figure anything else out.

Half a can of chickpeas and half a can of kidney beans mixed together with salt, pepper and chilli flakes; fizzy water and and apple.

Made a gorgeous mushroom, celeriac and black eyed bean soup. Mushrooms and celeriac are a great combination.

Ingredients were:
Onions sauteed in a little butter
Half a celeriac, chopped
Some dried porcini mushrooms
Half a veg stock pot
Half a Kallo onion stock cube
3 cloves of garlic
Some cooked black eyed beans and some of the water from them

Not liquidised. It's nice to have a brothy type soup sometimes.

Chicken noodle soup with a garlic and coriander naan. Cup of tea. Peach and handful of cashews.

Threw some black eyed beans in the pressure cooker with chilli flakes and some stock cubes that I thought were well past their best, but the result was lovely. Mixed in some chicken and garlic and did some frozen veg on the side. Will certainly be eating that one again.
