now however i am really enjoying the crisp taste of granny smiths

Something like a Worcester just when they start to appear in the shops - new season stuff is just lush after old apples for months.

Other than that, whatever looks good and isn't Pink Lady.

all i can add to this double sentence of complete accuracy is that the apple must be COLD.
