I'm guessing the tail livery signifies 'Pacific Fleet'?

It's the CO's aircraft from VF-111 "Sundowners". Tradtionally a Pacific fleet squadron but they were in the Atlantic fleet in their F-14 days.

The Sundowners' tails were always a scale modelling challenge as the decals never worked that well for large white areas so the truly afflicted were forced to paint the sundown...
 
Your post bcuster has reminded me of the silly yet highly enjoyable Top Gun Maverick film. I adore the fact that the Chinese took sightings of the fictional Darkstar movie prop so seriously, they actually diverted a satellite so it could spy on the area where filming was taking place. Then again, I guess Lockheed’s Skunkworks can be relied upon to deliver a credible next-gen design :D
 
On the subject of Top Gun Maverick, I know that in order to create a sense of threat and tension the scriptwriters had to take many absurd liberties regarding the technical abilities and challenges of various hardware from both opponents. But the absurdly lifesaving extensive use of flares still got me wondering if modern fast fighters such as the F18, never mind 5th gen aircraft line the Su-57, are nowadays fitted with flares at all? And would they actually have a snowball’s chance in hell to deter a multi-missile SAM attack, or even one?
 
Yup, pretty much everything has flares.

Flares can be pretty effective against IR guided missiles - they have two effects: simply to confuse the missile, so that it either wanders off in a direction the aircraft isn't, or providing a hotter, juicer target to the missile to chase and hit.

That's got me wondering if there is a modern equivalent to "window" or "chaff" - or are the electronic countermeasures sufficient ?

Yes, we had the Phimat chaff pod on the F3 (and used it over Iraq!) and more modern, though less handsome, aircraft like the Typhoon have chaff in the DASS but towed decoys are becoming all the rage now. You can see it on the starboard pylon above the 'Hindenburger' tank.
