Why won't my cream float on my irish coffee??

For best results you need the consistency of whipped cream just before it goes 'solid'. Thickened but pourable is best.
 
Success last night! 2 spoons of brown sugar, double cream poured very very slowly over back of teaspoon that was slightly just above the coffee. Will do another tonight and post a pic (need to use up the cream) ;)
