Davos is a character that is served better in the books. In that his internal monolouging makes it clear that he knows stannis is a particular type of insane, but is bound to him by honour.

He's not insane. He is ridiculously stubborn and sees the world in black and white with no grey (a lot like many on these boards).

Davos admires the honesty of that whilst at the same time bemoaning the stupidity of it.

you make a bold point and I'd broadly agree. But duty of that kind carries with it respect and love. Even for a madman. He is in thrall to stannis, with all that the term implies

Towards the end it really seemed like stannous realised what a fantasy his 'destiny', 'right' etc were, but couldn't accept a life without that as part of his identity. He didn't seem to believe his own words.
