Pressure cooker/Instant Pot recipe sharing

Boyfriend gave me the thoughtful gift of an InstantPot a while ago, after overhearing me having an enthusiastic conversation about them with some fellow urbs, who I think must have been han and Ms T !
Took me ages to use it for the first time - due to a combination of the intimidating tech and the space it takes up, I just kept it safely in its box on top of the kitchen cupboards. :oops:
Finally given it a go, and made a delicious butternut squash risotto on my first attempt. Not sure if it would stand the test for a real risotto afficionado, but it's certainly as good as any I have ever made on the stove.

Nice work. Awesome bits of kit. Enables me to make huge batches of my partners favourite tarka dahl for lazy freezer week night meals.

With all the all the fuss being given to air fryers because of the cost of living I think they should get more love. :)
 
That reminds me. I bought one of those electric pressure cooker things. It was pretty good if I recall.

I wonder where it went.

It'll be somewhere buried in the kitchen or pantry... :facepalm:
 
Just found out, by accidentally reading some instructions, that my 13-in-1 instant pot apparently does rice. I saw yoghurt and timed out tbh. Just used it as an air frier and replacement slow cooker since we have now somehow broken two of those. Not sure how?
Did find a specific pizza cooker/toaster oven will handle a pizza so the oven can bugger off mostly if I get round to that. Of course I am saying that after using 3 shelves and both remaining functioning cooker hobs (someone clearly dropped something then lied, yes using it is questionable)
Does appear to be a pan sized oven type thing tho so like a hob/pizza oven combined. Will have a look at some point and do oven calculation stuff.

Made 16x 500ml portions of cottage pie, mostly for my MIL, dad died earlier this year and I know she made most of the cooking effort for him. She will have homecooked (if reheated) meals at least some of the time damnit. Now need to knockout a bunch of roulades and freeze those. Then work out whats next.
