Hummus is pretty rare in Turkey, apart from in a few areas close to the border with Syria. I have made my own from scratch, but it's just a bit...meh. There are so many more interesting dippy type things.

Hummus doesn’t need to be exciting. It is beautiful and pure in its simplicity. It leaves the hummus-maker exposed, there are no spices to hide behind, too much of any element will kill it. It must be in perfect balance.

Muharrama does look really nice though... as does that take on imam biyaldi

Aye, I love hummus. I also love mashed potato which is another example of a thing that doesn't need to be exciting to be good.
