Making a Turkish inspired dinner for my landlady

I offered to cook for my landlady tomorrow. The food must be:

-vegetarian
-healthy(ish) - she's on slimming world and doesn't do bread or carbs, although did say she'd make an exception...
-preferably create lots of leftovers I can use for a picnic the following day
-not time consuming. I have training tomorrow and feel exhausted already.

I'm thinking of doing imam bayildi (Purple patch: Yotam Ottolenghi’s Turkish-style aubergine recipes) for the main, but not sure what to serve alongside it. Any ideas?

What about lentil soup to start?
 
Turkish restaurants round me (I live in a Turkish/Kurdish area) serve it with a nice mixed salad and some flavoured rice. Absolutely delicious, I'd be super happy if someone made that for me. And lentil soup to start and maybe some olives to munch on. Mmmmm. (I'd also get some Turkish bread but then I love carbs so... ;)
 
I suppose I can cheat and get a bag of ready salad. Noone need know. Ha. Shame there's no Turkish shops round here. I can get olives from Lidl but they're always from Spain for some reason and don't taste right.

I do imam bayildi with a bulgar wheat pilaf and cacik generally
 
If you want bread but can't buy Turkish bread locally, this recipe is a piece of piss - I've used it a few times and it usually comes out great :)

Nice one. I love that bread and my corner shop changed hands and they stopped getting it in :(

We always get our olives from Lidl and they taste great. :mad: Spanish olives are the best. Don’t you go dissing my adopted country! (The last two years I’ve done my own but no one in this town sells loose uncured olives)
 
Oh, I like them, they just don't taste the same as the Turkish ones. I'll look for the loose ones. Just writing my shopping list.

That looks good. I’ll try it. The site has some really good easy recipes.

I think it’s due to the cure. I cure mine greek style and they’re totally different to locally cured ones, even when they’re from the same grove.

Had to go to two different shops because Aldi only sells lentils in horrible microwavable ready pouch things, and don't have pine nuts (or olives other than jarred ones - I guess noone round here buys them). Pine nuts were pricey but I suppose they are everywhere. Also annoying that aubergines are cheaper in Morrisons (50p) than in Aldi (65p).

my local Aldi in Bristol was hiding the pine nuts in with the pumpkin seeds - as per usual they had far too many pumpkin seeds - but they don't have either at the moment ...

If you’re still in Sheffield, try Ozmen in Crookes (there’s a big one too somewhere). Not brilliant, but has some stuff. Also check out beanies nearby for veg and and the like.

Hummus.

I am in Sheffield, but nowhere near Crookes anymore (well, that's a lie - I am near, but there's a ridiculous hill in the way that I vowed never to go up or down. I've been to Ozmens in Crookes and on the London road and wasn't that impressed. Did get some frozen icli kofte though. You're the second person to recommend Beanies. I'm missing the fruit and veg from the street markets, I have to say.

I don’t actually regularly go to either tbh. Do most cooking from scratch and just substitute/order more obscure ingredients... I miss browsing the Turkish places in Tottenham though. Being lazy I tend to shop at the big Tesco on infirmary road.
