jam making...

anyone know how to? would it be a good idea / possible to make some at a craft club meet up?
:)
Follow the pectin box recipie, and learn along the way how to substitute a few goodies in.

it's not that hard. you just need patience.

That's me screwed then...

Toggle, I didn't realise you'd done it before.. we're saved!

So we won't all be jam making virgins after all... :D

do we need to get jam sugar or whatever it was then? or I guess maybe the apples have enough pectin?
yours, a jam making virgin in brixton...

I don't know  .. on the recipe I posted it just said to use granulated sugar....

I think we need to choose a recipe and prepare for that one.

If we get stuck there's plenty of local shops in the area to nip out to and get extra ingredients...

info from blackberry jam making friend:
he made it with only blackberries + jam sugar and it wasn't quite set enough...
so... think blackberry + apple + jam sugar is the way to go...
will look in the shop for j sugar (or pectin) and see if they have a recipe on the side later...

i've had a varied level of success.

bring lemons, i'll get the packets of pectin out of the cupboard in case we need it.

On the bright side, my mum and I made some strawberry jam without enough pectin which was really runny and would slide off the toast, but which tasted absolutely bloody great.

So even if we mess up, it should be ok.

Do we need a thermometer? ...Toggle?

I made my blackberry jam with just blackberries, jam sugar and a squirt of lemon juice and it was very well set.

I did the 'wrinkle test' with a cold saucer. The first two times I didn't think it wrinkled enough so boiled for a couple of mins longer - third time it wrinkled up good and proper so I could tell it was ready.

Happy blackberry picking and jam making!

If we use apples, we shouldn't need pectin or lemons. I think jam sugar is the way to go though.

It's a bit late in the day for me to get hold of jars - I don't have any at home. I can try to get hold of half a kilo of cooking apples though.

Don't bother getting apples.. there is an apple tree in the back garden that is apparently producing too much windfall to use.. we can use those!

Aha! I did actually wonder where I would get them from. But I feel like I need to contribute something... everything seems to be covered except blimmin jars and I can't find any :(

i don't own one.

yeah, apples or lemon juice should eliminate the need for extra pectin, but it's worth having some just in case.

I've never bought jam sugar either, it is just sugar with added pectin, costs more than buying sugar and pectin.

what we need to look at now is exactly who is bringing what. ending up with a ton of jars and no sugar isn't good.

i will bring pectin, felt tip pens for labelling, labels, and some material for going over the top. i've got some kitchen cotton yarn that would look nicer than rubber bands to hold on the material. i will also bring a large, lidded, tub with a handle, perfect for transporting a lot of fruit. Some smaller tupperwares would be good as well.

i'd also like to know what parking is like in the area, i normally drive when i go out to places. Are there any parking restrictions there?

There is residents' parking but I believe it is suspended at weekends so you will be fine to park.

I'm bringing sticky labels and providing apples (from back garden!)

We can use tupperware etc from the house. Placcy bags might be a good idea too for blackberries transporting.

We can buy sugar in the local shops (which we'll pass to and from the scrubs.. but would probably have to go further afield for pectin - so it might be best to make sure someone brings that - although even that could be bought in the Sainsbury's 5 mins cycle away!).

TBH.. we need very little it seems, none of which we can't buy on the day locally anyway, so if we do end up slightly underprepared it will be easy for me to nip out on my bike and pick up anything extra we need!

We worked that out in the end :D

That was so much fun... thanks again to K and his folks for letting us use their house and their lovely windfall apples!

I was too lazy to have breakfast this morning, but I'm going to open one of my jars tonight.
