I have vast quantities of regular supermarket mushrooms that need to be used today. My only thought is to make something and freeze it. Soup would be too much volume I think, any other ideas?
I don't think many people have a dehydrator, but if you don't and want to dry them and have an air fryer you can slice them and use the air fryer at 70C to dehydrate them for storage - then you have dried mushrooms to use in risottos and sauces and the like.
If it was me I'd freeze some sautéed and also try dehydrating them by slicing, threading them on a tough thread and hanging them outside, seeing as how it's excellent drying weather atm.
