A thread to talk about how much we love eggs. Vegans aside, it’s hard to see who doesn’t love an egg. All wrapped up in a handy little nutritional package. I’ve done a poll, but I’m not sure I can actually choose my favourite kind of eggs.
 
A perfectly soft boiled egg is a thing of wonder. But It's limited in how you can have it

I normally go scrambled or have an omelette to open up the serving options. Omelettes with cheese, chilli, peppers and mushrooms are my go to
 
Favourite eggs, in order:

Scrambled (not too sloppy though, again a textural thing)
Fried
Hard boiled (to make egg mayonnaise for sarnies, absolutely love egg mayo)
Frittata
 
Hard boiled eggs are diet food, but I'm on a diet at the moment so I'm eating a lot of them while dreaming of eggs fried in butter.
 
Effort/reward ratio for hard boiled eggs is very poor. You have to make a batch all at once.

Really? I just put them in water and simmer them for 10 minutes then peel them, I've put more effort into doing beans on toast :confused:

I need egg mayo soon, I was planning to do some yesterday but got caught up in other things and now we need more bread if we're going to have sarnies.

Soft boiled eggs have been a revelation recently. Not much else that small lasts me so long appetite wise, so if I have two Weetabix followed by a boiled egg with toast at 6.30 that will last me through til lunch at 12. A medium egg at that.

A couple of times a week I'll have two.

Got my technique down perfect now, same every time, not runny but spreadable :cool:
 
I can only make scrambled or fried but tend not to make fried as they stink the house out and scrambled requires things I dont tend to buy (butter, milk)

Poached I don’t like.

Boiled I don’t like the smell and haven’t eaten since a small child.

Hard boiled I always mess up when I try

Don’t know how to make an omelette but I do like them

Devilled I’ve never heard of.

Rarely buy them due to the above challenges
 
Omelette (onion, pepper, mushroom, cheese, tomato, bacon, bit of milk in with eggs)
Hard boiled (yes to egg mayo sarnies)
Fried with all-day breakfast

I do omelette on the induction heater and I can't get them right - they end up just sticking to the pan meaning that the omelette rather than being lovely and omeletty with toasted cheese on top toasted under the grill come out as scrambled with bits scraped off the frying pan.

Similar for fried eggs which come out broken with white bits scraped off the frying pan.

I've just bought a converter plate for the induction heater which hopefully spreads out the heat a bit more so may solve things aside from the cheese on top. Thinking about ithough I've had some success with the air fryer (have I mentioned I have an air fryer?) which I ought to try again and which does give lovely omeletty omelette with toasted cheese on top.
 
My sister calls them hen periods, which makes me think twice whenever I contemplate buying a free-range egg and cress sandwich.

You can get electric omelette makers. They're relatively cheap.

Use more oil. Preferably butter.

Seconding the suggestion that you need more butter/oil in the pan
 
I had a picky childhood aversion to egg whites that persisted long into adulthood. These days I embrace the egg in all its incarnations. Faves are:

Scrambled on toast with Salad Cream
Poached (esp. with risotto, polenta, etc. but tbh there’s pretty much no savoury dish that can’t be improved by plonking one on top)
Soft boiled with salt and toast soldiers
Omelette (3 eggs, salt, pepper & Gruyere whisked together, poured into smoking hot pan with knob of butter, cooked in 60 seconds 😋)

Right, nuff talk, it’s eggs for brekkie!
 
I love egg fried rice, but that's as much if not more rice than egg (although the egg is what makes the dish, obvs.), so possibly moving too far from the remit of the thread.

N likes stuff with tomato base and eggs cracked on top and cooked/baked in it - several variations of those sorts of dishes exist across the globe.
 
Poached, ideally on buttered toast with avocado, hot sauce and a little salt.

Perfection.

I don't mind scrambled occasionally and I love a fried egg on top of a stir fry noodles or rice.
