Celery goes in most savoury stuff that I cook. If I start anything by frying an onion, then a celery stalk goes in it too. And the leaves.
I also like it in a salad and it is a lovely thing as a braised vegetable in its own right, as mrsfran says.
Sipping a Bloody Mary and crunching on a celery stick is another excellent use for celery.

Yeah, celery is an immense thing.

I chopped up the remainder and froze it, though, while doing so, tasted a few bits raw... only to realise I actually quite like it. Could easily eat it in a salad now, providing there's not too much of it and it's chopped into small-ish bits.

Try an apple, celery, and nut salad, with a mayonnaise or yoghurt base.
