Any recommendations? I can't face any more chick peas. If ingredients are something I can get easily at a small Asda, even better. Must be delicious and spicy, not some bland veggie stew sort of thing.

Use any veg you want, put in some red lentils and add spinach just before it's finished.

Also always use a couple of sorts of curry paste or powder and add a clove or two

What pickmans said. Also I really like ginger and mango powder in a curry but they are a bit harder to come by.

Beetroot might be hard to get in a small Asda but the may have the vacuum packed stuff which i think would do for this.

Oh and another thing - if you make enough to have seconds the next day why not get a garlic naan so you don't have rice both times?

Butter beans are good in curry and can replace chickpeas. Also tofu. I don't have any specific recipes as I just chuck stuff in, but you can switch between tomato-based sauce, dairy-based sauce (if not vegan) and coconut milk-based sauce for variety - or even just cornflour thickener as the base.

You can use sweet potato or any sort of squash available for the pumpkin element. That recipe does 4-6 portions so you can easily halve it if you need to.

Back from the shop (went to Jacks rather than Asda - it's a cheap Tesco). I have: chestnut mushrooms, beetroot, baby potatoes, courgettes, onions, garlic, ginger, stock cubes, chilli paste (they didn't have actual chilli peppers), and tinned tomatoes. Plus I have lots of spices in the cupboards. Hopefully I can combine this lot into something delicious.

Big fan of Chickpeas but Lentil curry is superior. I am a fan of green Lentils. Chuck in plenty of onion, garlic then something to bulk it out like thick slices of bell pepper, potatoes or even eggs (unless vegan) and delicious.

If you are eating chick peas, bung them in the oven with some oil and spices for a bit before you add them to any sauce. Makes a world of difference.

I buy the frozen little blocks of spinach in Tesco - ideal, already portioned up, and nicer than tinned.

Brussels Sprouts.

Fry them in veg oil till they start to brown, put them aside then throw them back in when the curry is halfway cooked.

Curry is the best way to cook sprouts, Indian and Thai styles work just as well.
