the best thing about (meaty) casseroles is you don't need a recipe, just use whatever you fancy/have to hand (i usually add a pulse or barley to the meat & veg) and a generous hand with the seasoning/soy/mustard etc. never made a veggie one though.

if was going to make a veggie casserole, i would use a lot of root vegetables and some barley and maybe some dumplings to 'replace' the meatiness.
but to be honest, i'd rather make a curry with pure veg instead. casseroles are best suited to meat as it's about long slow cooking and most veg won't be at its best after 2 hours in a pot.
i do find that cooking the meat first for an hour or so before adding the veg gives a better balance of soft melty meat and non-disintegrating veg than bunging it all in together at the start.
