Leaving Stilton out of the fridge

A while ago I accidentally left a Stilton out overnight and it got deliciously soft and creamy.

The internet tells me that this is dangerous and cheese should not be left at room temperature for more than 2 hours, which seems excessively cautious. We ate the cheese with no problems.

Yes or no to cheese left out overnight?
 
Yes. Under normal circumstances I wouldn't even consider eating it until it'd been out the fridge for a few hours.

All my cheese has been in the garage, which is cold but not fridge-cold, since Sunday night. Some accidentally got left in the kitchen last night and it's fine.

I don’t think Stilton is massive in France.
No, but the idea of eating cold Roquefort... Eugh. Same for gorgonzola, I suppose, so let's add Italians.

That being said, pretty much the only English cheeses you can find in a good French fromagerie are cheddar and stilton.

If in doubt on such matters ask Gentlegreen for advice. He is still alive and takes far greater risks with both food and electrical safety.

He keeps his casu martzu in the airing cupboard for three months before he considers eating it.
