I'm making a game casserole

If you ever see reindeer get that. Lovely stuff and is fantastic in a casserole.
Thanks for the tip - Lidl are selling it frozen at the moment. :)

Back to the OP, whatever you fancy to mop up the gravy bit with.
 
What game?
Venison - mustard mash 'cos venison is sweet.
hare or rabbit - mixed roast veggies or polenta.
Fowl - mash.
 
Neep is a favourite with game dishes round here, either boiled and mashed with plenty of black pepper, or cut into rough chunks and roasted. Garlic and chilli oil does really well with it. You can also chop onions, peppers or almost any other seasonal veg you like in with it.

A really posh place near me also seems to like serving deep fried cabbage with their game - pparently it tastes delicious but I'v never been that tempted to find out.

@Greebo, I haven't talked to mum yet, but I'm pretty sure she follows a relatively trad recipe, so I'll just translate one I found on tinternet.

500 g reindeer meat
150 g bacon
250 g mushrooms
2 tbsp butter for frying
20 cl water
30 cl sour cream
10 cl milk
5 crushed juniper berries
0.5 tsp dried thyme
1 tsp salt
0.5 tsp pepper

Brown the reindeer, bacon and mushrooms. Put it in the casserole.
Add water and boil up, simmer for 10 minutes.
Add sour cream, milk, juniper and thyme. Let sit over low heat for another 5 minutes. Done!

I left out one ingredient - brown cheese (not regular cheese, but caramelised whey) - which you can't find here easily I'd think. It adds sweetness basically, so just substitute in something else if you think you need more sweet.

This is often served with lingonberry jam and mash.

@TruXta It's not just a bonus, it's like going jeans shopping when (just for once) the very first pair you pick up are your size, the right cut, the right colour, the right price, and even the right type of denim. Amazingly unusual, in a good way. :cool:

a full twister
a dash of charades
play for 3 hrs
serve with Ludo

You can Gjegost (sp?) near me, I think it should be availble some wher in a big city
