butternut squash

you can make yummy cannelloni.
Cook the squash, I normally cut it into cubes and microwave it in a little water until soft.
Mix the drained and mashed squash with a tub of ricotta cheese and then stuff into cannelloni. This is fiddly but worth it!!
Place the stuffed tubes in a rectangle baking dish (just water size you have, not a full on roasting dish though).
Pour over a nice tomaote sauce. Either from a jar, dolmio or preferably something nicer, or make one yourself. Top with grated cheese and then bake in the oven for about 45 minutes. Serve with a green salad and garlic bread. YUMMY!
 
Golightly cooked the risotto for me last night. Very nice it was too :D
Tonight I'm roasting the other half of the squash in olive oil with peppers, garlic, tomatoes and chilli. I'm softening some red onions and will put all the veg onto puff pastry as a tart for dinner . I made this recipie up but have very positive feelings about it :) YUM
Then we're going to offline life's good innit :D

as u can see it has a scooped out bit
i have cumin, onion, garlic, tomatoes and might roast it
any other suggestions as to what to put into the scoop?
i am vegi

e2a - i did buy my other veg from the local stall and not tesco
 
Cube it,
put in roasting dish/tray,
drizzle with Olive oil,
Bash up some coriander seeds and chilli flakes,
sprinkle over teh orange cube tings,
chop some fresh Sage (the herb not the intelectuals)
sprinkle over it as well
salt and pepper..
wack it in with the rest of your roast for about 30 mins

Stuffed with a chick pea mixture and roasted in the end. Eaten with salad and potato salad just before heading off to the Wales Meet on Saturday night.

I made those roast butternut squash halves with feta and basil but the feta was some cheap fake weird stuff from Lidl so it wasn't *that* nice.

I will be making it again with proper feta and walnuts too :cool:
 
Lentil and butternut squash lasagna

Olive oil, onions, garlic, herbs de Provence, sautee until soft.
Add puy lentils, veg stock, bay leaves. Cook til soft but not mushy.
Meanwhile bake the squash til soft but not squashy. Then slice it about 1 or 2 cm thick
Make layers: lentils, wholemeal pasta lasagna sheets, butternut squash, lentils, pasta.
Pour over a white cheese sauce made with olive oil, wholemeal flour, veg stock, semi skimmed milk, nutmeg and parmesan cheese.
Put slices of goats cheese on the top and bake in a medium oven for 40 minutes or until done.

Yum to the power of 100.

I nearly didn't make it because I loathe Sarah Raven but decided to try and rise above it :oops: :D

Yeh, I cook quite a few newspaper recipes :)

I'll try some bacon in it next time I think.

Bacon and newspaper - that's an interesting combo. Do you soak the newspaper first, or use it dry?
