This is an IR movement detector for an outside light. If I wanted to ditch the detector and bury the cable in the wall, but still have the light work via the switch, surely I'd need to splice two of the cable's wires together first, otherwise the light might not work at all? Red and yellow?

It might be worth looking in the switch. That cable (3 core and earth) might come direct from there and it would be better to ditch it from there rather than leave a live connection in the wall.
Or it might come from the light, so same applies.
Worst case, it might come from an inaccessible junction box then you might have to join. Would be better if the joint could be in an accessible enclosure.

How does the light work at the moment? Only comes on when triggered or can you over ride it?
 
What I’m trying to get at is that there is a junction somewhere where your adjustments can be made in a safer, easier manner than leaving a live cable in the wall.

It comes on when triggered. There's a switch but I'm not sure what it does as it doesn't seem to make any difference to anything:

Pretty sure the cable runs direct from this indoor switch to the outdoor detector in the first picture, as it's only about 50cm away and there's no junction box I'm aware of.
 
Looks like it could be switched on when it’s not been triggered.
Assuming one of those 3 cores goes to your light, you would just need to disconnect the one that goes out to your pir
