Veggie burgers

Right. I'm on a quest for the ultimate veggie burger recipe.

So far this week I have made these:

1. Green curry veggie burgers with black beans and walnuts - http://www.thekitchn.com/recipe-green-curry-veggie-burgers-with-black-beans-and-walnuts-190387

I massively recommend this recipe - very very quick and easy and a fine fine burger.

2. 'Best ever veggie burger' - with roasted beetroots, caramelised onions, oats, prunes etc etc- http://www.thekitchn.com/recipe-best-ever-veggie-burgers-96967

Pretty significant amount of faff with the end result being tasty but not worth the significant amount of faff...

So - veggie burger me up....
 
I made some very simple bean burgers a few weeks ago which were surprisingly good

Tinned kidney beans, slightly mashed up
a couple of handfuls of breadcrumbs
a desert spoon of flour
garlic
cumin seeds
chilli powder
a pinch of paprika
a handful fresh corriander

mix together, mould into shape with floured hands and shallow fry
 
I do home made ones with cooked, mushed up mung beans, finely chopped veg, oats to bind and whatever seasoning I fancy. Then I roll them in toasted sesame seeds and cook on a baking sheet for about 20 mins. Ooh, and juice of a lime if they're looking dry.

Bit fiddly, but worth it - the flavours are great.

Mine turned out a bit on the wet side, so make sure you drain the potatoes well.

In the book, he debates shelling the broad beans - I didn't bother (life is too short) and I think the shells make the texture more interesting.

I'll definitely be making these soon - and will definitely be shelling the beans! Definitely something for the weekend rather than a quick week night burger...

Decided to give the veg burgers another shot, this time I looked up some recipes.

I came up with these awesome bean burgers. Callie will dig this.
Really simple to make and cheap. The only thing you have to plan is soaking the beans overnight.

1/2 cup dried black eye peas & 1/2 cup dried black beans, soak overnight then discard the water.
Boil the beans for about 30 minutes with a veg stock cube and a couple of bay leaves.
Add a handful of dried brown rice and boil for another 30 minutes. Discard the water.

Chop up half an onion and half a Capsicum (I used 1/4 of red and greeen) really fine and fry in a small amount of olive oil until the onion starts to go brown.
Add 2 cloves of crushed garlic for about 30 seconds then about a tbsp of Balsamic.
keep stirring until the vinegar evaporates and you are left with syrupy gooey onions

2 slices of frozen bread blitzed in a blender with 1/2 cup of oats (I used some porridge I found in the cupboard)
Add 1/2 the beans/rice mixture to the bread, oats and veg mixture.
Beat 2 eggs and put them in.

Take the remaining bean and rice mixture and smash them up with a potato masher.
Chuck the mashed beans in with everything else.

Now you can add whatever you like to flavour it. I used:
Smoked paprika, Worcester sauce (veg version - homemade), Dijon mustard, nutmeg, black pepper. chilli flakes.
It's up to you as the base recipe is so versatile.

Stir everything around for a few minutes and shape into burgers (4 massive). They were really solid, maybe slightly sticky from the egg.
I'm not sure how a vegan version would hold together.

Next time I will try a more mexican flavours with Adobo sauce and smoked jalapenos.
I served these with the same shit I put on all my burgers - Mayo (with rosemary) , leaves, sliced raw onion, tomato and beetroot.
Topped with salsa and extra hot peri peri. I put some nice cheese on this as well.

Anyway, really good shit. They held their shape perfectly when they were cooked and had a great burger texture when we ate them.

My wife even said she preferred them to meat burgers, which is a big deal as she is a proper old school carnivore. A+++ will eat again.

These are really good - although it took me forever to finely chop all the mushrooms as I don't have a blender.

Don't forget the buns either! Home made makes all the difference, especially if you are putting in the effort to make the burger. The mustard buns in the mushroom burger recipe above are very good. My favourite recipie I've found has to be the Ottolenghi's broad bean burgers. If you have time shell the broad beans - or get a friend to come around early to your BBQ to lend a hand, then do so!

I've yet to find a home made veggie burger which can be cooked on the BBQ. Anyone?

When you can't be arsed to make your own, the Dr. Praeger's ones in Costco are pretty nice. They only sell the California ones, but I understand they're the best of the lot.

carrots, onions, string beans, oat bran, soybeans, zucchini, peas, broccoli, corn, soy flour, spinach, expeller pressed canola oil, red pepppers, arrowtoot, corn starch, garlic, corn meal, salt, parsley, black pepper

We all like them, and I've never previously been impressed with a veggie burger that wasn't home-made. (and most of them were crap too)

I think the best veggie burger I have had was a falafel burger at Glastonbury festival. I am not sure if it was just the goodness of the pulses and such hitting my drug and alcohol addled body that made it so nice, or it was as good as it seemed. I may never know...

Do like a cheese and leek burger mind you. I find that cheese adds a bit of grease to the veggie burger experience which I feel I need in a burger. It might be be a psychological need but I stand by it.
 
I was once at a restaurant and had smoked butterbean sausages - utterly lush, and could easily be formed into a burger shape rather than a sausage shape. Sadly I have been unable to track down a suitable recipe.
 
i second Badgers on the festival veggie burger - had a fantastic hallumi cheese falafel wrap at the Electric Picnic this year - also packed with salad and goodness - really yum.

as an evil carnivore i am nevertheless passionate about what makes the quintessentially good 'veggie burger' so please, continue :)
