Toronto

If I were you I'd just get a room in an airport hotel. You'll probably be knackered after the flight anyway.
Yeah I think that's probably the best idea... There is a chance I can stay with someone who lives near the train station that the airport express goes from and they might be able to show me a couple of bars, but there doesn't seem much point if that doesn't work out.

had a good time visiting niagara this time last year, on way back stopped at n-o-t-l, very fucking twee

NOTL is the place I have come across Ontario red wine (clearly the local climate prevents an abundant crop of grapes) and it was lush.

Niagara Falls is fun, in an I-love-tat kind of way. The biggest shock is crossing over to Niagara Falls in New York, it's just a regular town with a nice mall and by the falls themselves is just a trim public park. No attempt to exploit the falls for commercial gain at all, which is the opposite of what you'd think.

i've been to a vineyard by lake erie - their red wine was lovely.

I've got a 12 hour layover in Toronto, seems plenty of time to get into town and have a look round, I guess I'll have 5 or 6 hours to kill in the end, any suggestions?
The other suggestions are all good - it's a shame you're in so late and out so early as it's a nice place.

I'm not sure what time the airport to central train runs until, but it's a great way to get into and out of the city centre.

arh just realised, the flight arrives 8pm on a Monday, and the connections leaves 8:30am the next day. that might make things a bit tricky. um do bars open late?

Bars are open until 2 - I don't go out on Mondays very often these days but if I was out on a Monday looking for good music, I'd try Cameron House, Graffiti's, or maybe the Horseshoe, all reasonably close to Union Station, where the airport train goes from.

A company I worked for had a Veneer Preparation plant in Mississagua, next door to Toronto, that I visited a couple of times. Lovely people, think they were taken over by a Canadian company.
The other plant we had was near Knoxville Tennessee, sadly I never got there.

When I was working as a beekeeper's assistant near Toronto we once visited an Italian farmer who plied us with some of his home made red wine which was lovely.

Anyone who's lucky enough to be travelling further afield in Canada, then I'd definitely try and get to British Columbia on the West Coast. It is spectacular. Scenery to die for and some of the best hikes in the world. We spent several days in that region alone, when travelling through Canada and the US a few years back.
