toffee recipe

i have a real hankering to cook some toffee. there are a few recipes out there on the internets but they either use milk or vinegar/bicarb of soda

does anyone have a good, tried and tested toffee recipe, which doesn't use milk?

or, what is the purpose of the vinegar/bicarb of soda?!

i thought bicarb was for honeycomb like in the middle of crunchie bars? and the vingar to set it off to make bubbles?
