Something neutral and bland. I've got a fucking gold-trimmed pink and blue dolphin on the wall of my shower cubicle (put there by the previous occupants), that sort of thing was all the rage in the '80s, but looks very dated now. I'm sure we'll be saying the same of today's fashions in 30 years time. Tiles ought to be able to stay up a long time rather than be changed with every whim of fashion so go for something that you're not going to be wanting to tear down in a few years time when you realise it's dated/hideous. White or off-white/pale neutral colour is best in the long run.

White with a finish is always the best. If you have a white suite you can always change other colours to brighten up the bathroom. different coloured towels, curtains/blinds, soap dishes, pictures etc will add interest. And, because your tiles are white, it can always look clean and bright.
