"Rice and peas" recipe

Just made another big batch to take to my annual family picnic tomorrow (which is now in my cousin's house due to weather).
I put far too much coconut cream in so it's quite stodgy, but that is actually a good thing as it's mega spicy from me getting a bit "splash happy" with the chilli oil.
This one had crab eye peas in.

I'm surprised all these have tinned beans. I was given a recipe 15 years ago:
Soak your kidney beans overnight
Sauté finely chopped onion, two chopped tomatoes and green pepper season add fresh thyme and drained beans cook with loads of water and coconut block a couple of inches square until beans are almost soft , add rice cook until water is dry/beans are cooked (approx 2 hours). Usually served with a roast dinner in the supported house I worked in.

Sounds about right, yeah doing it the real way is to soak overnight (which everyone in my family still does).
 
How about ackee minus the salt fish? Never made it but the takeaway where I eat it from does it with lots of roasted peppers and a sauce to die for.

Ta chuck, but there's no chance of getting anything like that round our way :)

I ended up roasting aubergine, courgettes and onions and put the same rub on them as last time. Nom! Reckon what I'll do next time is roast halves of peppers, put some actual chilli or hot sauce into the rice and peas, and stuff the peppers with the mixture

That sounds wicked.
My last lot of RnPs was mega spicy from too much chilli oil but was delicious.
I have some left. Could do stuffed peppers with it, and cheese.
Will I did though as it's been in the fridge for a few days? :D

A few days? I wouldn't, tbh. I left mine out overnight and it caught the sun the next morning so I chucked it. :(

Cheese. Now then, for some reason I always fancy putting cheese on top, but having done it, it tastes really weird with the coconut!

You are most probably right but it feels so bad to through a huge tub of food away :(

I did similar with a fish pie once. Added herbs, nutmeg and coconut cream to make the "white sauce" for the fish more interesting, then stuck grated cheese on the mash, and browned it. It was odd, but in a nice way!

2 hours? :eek: Rice only takes about 20 minutes to cook.

Any suggestions for something to cook to go with it? I have courgettes, carrots, tomatoes, beans and all the usual stuff.

I meant 2 hours overall to cook the beans :)
 
Oh gosh - I make it, but its a bit different every time so a definitive recipe is difficult. Anyway, this is how my M-I-L taught me to make it.

Basically its finely chopped onion, garlic and thyme, sautéed in a little oil. Chuck in a can of coconut milk, salt and pepper, long grain rice and a rinsed tin of kidney beans. There should be about 2" of fluid over the top of the rice so top up with water as necessary. Simmer until the rice is tender.

Sometimes I'll add tomatoes, sometimes I'll use brown lentils or black beans instead of kidney beans, sometimes I'll add chives. Quantities of ingredient vary depending on how I feel, but usually 1 onion, 2 cloves of garlic, about a teaspoon chopped thyme. Oh and watch it carefully towards the end of cooking as coconut milk burns easily.
