You should test jam while it's warm! (and then again when it's cold obviously)
I finally found time yesterday to make this year's blackcurrant jam from my blackcurrant bush. Blackcurrants were bigger and juicier as I'd left it a couple of weeks later than usual but only just a kilo so a disappointing crop. The jam is okay but very tart. Managed three jars, should last me a while.
