Ok, I can cook tuna steaks and salmon easy enough, and I am OK with shellfish, but does anyone know any good fish recipes?
Preferably fillets of fish rather than the whole thing, its the head/eyes thing, I cant stick it...

a layer of cooked and drained spinach spread in a large dish, top with fish fillets and cover with cheese sauce. Bake in the oven and eat with crusty bread or other veg of your choice. I think it's called a florentine?
 
Any oily fish with gooseberry sauce.


Any fish benefits form being rolled up in foil with anyhting from this list

butter
olive oil
lemon juice
orange juice
herbs
chilli ( dried or fresh)
white wine
garlic


Good combos:

white wine butter and tarragon
olive oil chilli and coriander
orange juice parsley, cracked pepper and white wine

But you can go wild. As long as there is some liquid ( fat or juice) you are away.

Also, whiote fish are nice rolled in slices of parma ham and baked
 
If you like fried fish, then take your fish, roll it in flour, then egg, then oatmeal. Much nicer than breadcrumbs.

I tend to use salmon but it's just personal choice. Smoked fish is nice but the cheese sauce for that needs to be quite mild.
