Does fish sauce go off?

What's the deal with having ingredients for so long that they go years out of date? If you buy it why don't you use it?

Half the ingredients in my cupboards are past their expiries. Best before dates are for snowflakes with no sense of taste or smell.

If they smell and taste OK I use them. Never had a problem.

We of course have the kitchen staff make everything from fresh every day, even the salt is mined that morning and couriered over.

Fish sauce doesn’t go off because it’s already off when you buy it. If it wasn’t, it wouldn’t stink like rancid piss.

You were doing ok until you used the word snowflakes, which marks you out as a gammon.
