What's for tea tonight? (#8)

Chicken Maryland (thats what it says on these shop bought fillets in breadcrumbs prepared by the butcher for €4), new potatoes (which i will parboil then roast in olive oil and sea salt), roast tomatoes and garlic, baked beans with Lee Perrins and cheddar. Dessert of melon yoghurt with milled flaxseed. A bit of a random dinner before payday.

20g of flaxseed
tahini
Dijon mustard
Aldi blended French Malbec

The kidley beans were very cheap (23p) and for some reason I'd resisted eating them for ages, but they were quite pleasant - and they're among the most healthful kinds of beans.

Roast spuds / carrots / parsnips, paprika roasted shrooms / toms / onion / courgettes / peppers, cauliflower cheese, chicken breast, veggie sausages, onion gravy.

Eclairs for afters if there is any room left in my tum tum :thumbs:

Finally got my cooking mojo back, its been a long two months but the extended Shambala recovery finally got me needing proper food.

Saturday I did a four hour Hazan spaghetti bolognese sauce that finally had us feeling human, plus a couple of portions for the freezer.

Sunday I did an incredible chicken braised in cider and bacon with roast potatoes, carrots & garlic, steamed cabbage, broccoli and cauliflower and gravy. Met a mate in the park and invited her and her two kids over for tea too - the kids raved about it so much their vegetarian mother ate a load of the chicken too :eek::)

Also made chicken stock for tonight's porcini mushroom and pea risotto :cool:

This chicken dish is always a winner, recommended. I always use a whole chicken and joint it myself and take the lid off half way through to thicken the sauce:

We have cous-cous made of cauliflower with added veg and toasted seeds in a lemon and olive oil dressing, garlic mushrooms, Mediterranean cow cheese ( :hmm: ) and tinned kippers for tea tonight.

Sounds incredible, what's Hazan bolognese? Your chicken with cider and bacon also sounds great :cool:.
