where is the best/cheapest place to book dover calais car ferries?

We usually do it direct. It works well enough and the prices are about the same. Failing that through a travel agency, the prices vary very little in our experience.

I was looking for over easter and Eurotunnel was coming out about 30 quid cheaper than P&O

I didn't look too hard but check the tunnel as well if you are just going by car.

DFDS is now plying the Dover-Calais/Dunkirk route, they should come in with a reasonable fare.
